 1 ק"ג קמח כוסמין  

 20 גרם (2 כפות) שמרים יבשים

 50 גרם (1/4 כוס) סוכר

 540 מ"ל (¼2 כוסות) מים

 120 מ"ל (1/2 כוס) שמן זית

  1 ביצה 1 כף מלח

  *להברשת הלחמניות לפני אפייה*

 1 חלמון טרוף עם מעט דבש או קורט מלח וקורט סוכר 2־3 כפות שומשום 

  *זיגוג הלחמניות לאחר אפייה*

1/4 כוס שמן זית 3 שיני שום כתושות חופן עשבי תיבול קצוצים: פטרוזיליה, כוסברה, אורגנו, בזיליקום 

  *אופן ההכנה*

בקערת מיקסר עם וו לישה מערבבים את הקמח, השמרים והסוכר יחד. מוסיפים (בהדרגה!) כוס מים, ולאחר מכן מוסיפים את השמן, הביצה והמלח ומערבלים כ-10 דקות עד שהבצק גמיש יפה ומתנתק מדפנות הקערה.  משמנים את כדור הבצק ומעבירים לקערה משומנת. מכסים ומתפיחים שעה (עד להכפלת הנפח).  לשים את הבצק להוצאת אוויר, מחלקים ל־20 חלקים שווים,  מסדרים במרווחים בתבנית מרופדת בנייר אפייה, מכסים ומתפיחים שוב כ־30 דקות.  מחממים תנור ל־180 מעלות.  מברישים את הלחמניות בתערובת הביצה והדבש, מפזרים שומשום ואופים כ־30 דקות עד הזהבה.   בינתיים מערבבים בקערה שמן זית, שום ועשבי תיבול ומברישים את הלחמניות כשהן יוצאות מהתנור בתערובת.  ובתאבון.
